tortellini soup: Serve to someone you love who will rub your feet.

1 can of crushed tomatoes
4 cups of chicken stock (low sodium please!)
basil
oliveoil
one large white onion
2 zucchini
3-4 carrots (the kind bunnies eat)
tortellini


Cut up your veggies into tiny bits + prepare to let them lazy with about 4 tablespoons of olive oil in a skillet on medium heat, until the onions become translucent.
I find the thinner the better. It disguises the vegetables from those unwilling to participate + absorbs the flavor. More surface area, more yum.

While the vegetables are busy in the skillet, fill a pot with a can of crushed tomatoes, 4 cups of chicken stock and a palm full of basil.
Add more tomatoes for more of a stew or more stock for more of a soup consistency. This recipe is super simple and all about your tastes. You can't mess it up.
Cook on a medium heat.


Add the vegetables in the skillet to the tomato/stock mixture in the pot along with the tortellini you have.
Cook the tortellini based on the package directions (Approx 8-10 minutes) in the tomato/stock mixture as you would normally cook in water. Voila!
